Chocolate Cheese – The Truffle Alternative
Several years ago we made a delectable discovery in Shullsburg, Wisconsin. Our purpose in visiting Shullsburg was to gather information regarding our great uncle times two who was a newspaper man there following the Civil War. We also wanted to verify the vortex phenomenon at Gravity Hill which proved to be authentic. We had been told that if we put our car in neutral, the car would seem to roll uphill for almost half a mile. We tried it three times and probably would have continued all afternoon, but other drivers were waiting their turn to enjoy this freaky experience.
Our delectable discovery was Chocolate Cheese Fudge made at the Shullsburg Creamery. We have since served it to family and friends who are surprised to learn it is actually cheddar cheese and not a creamy confection. Other fromageres make chocolate cheese but Shullsburg Chocolate Cheese remains our favorite. It is available in some supermarkets and online from Shullsburg Creamery.
Sue recently suggested chocolate cheese would make yummy (and easy) truffles. All that is required is to let the cheese warm to room temperature, cut it into 1” cubes and roll the cubes into balls. The truffles can be rolled in any number of coatings. We used finely ground walnuts, shredded coconut, and chocolate sprinkles.
