Gluten-Free Hello Dolly Bars

  • 1/2 cup butter                                                                              
  • 1 1/2 cups gluten-free arrowroot cookie crumbs*
  • 1 (14 ounce) can sweetened condensed milk
  • 1 1/2 cups semisweet chocolate morsels
  • 1 1/3 cups flaked coconut
  • 1 cup sliced almonds

Preheat oven to 350 degrees. Crush arrowroot cookies to make crumbs. I put the cookies in small batches into a Ziploc bag and crush by rolling with a rolling pin. Place butter in a 9 inch square baking pan and melt the butter in the oven or microwave (if using a glass pan).  Add cookie crumbs to butter, combine and press down in the pan. Pour sweetened condensed milk over the crumb base. Add chocolate morsels in an even layer. Cover morsels with an even layer of flaked coconut. Sprinkle sliced almonds evenly over the other layers.

Bake for approximately 25 minutes. Monitor closely towards the end as the arrowroot crumbs can become over baked. These bars are so rich they can be cut in very small servings when cooled. If you are able to resist temptation, they will keep very well if placed in an airtight container. I think this arrowroot version of Hello Dolly Bars is even better and more elegant than the original.
*The arrowroot cookies available to me are Mi-Del brand.
